This recipe is delicious and I guarantee you will love it. I had a pack of barley wheat in my pantry that needed to be used. I put this recipe together, thinking if it’ll go together, but it seriously got me hooked ones I tried it. I know you may be looking at the ingredients and thinking uhhh coconut oil and italian seasoning…!? I don’t know, well give it a try and leave a comment below. This is a healthy side dish that will make you come back for more and leaves you feeling great. Have this as a side with any meat or fish of your choice and there you’ll have it! A great and healthy meal!
Ingredients:
- Barley wheat 1.5 cups
- Cold water 3 cups
- Coconut oil 2 full tbsp
- Thyme 1/4 tsp
- Italian seasoning 1/2 tsp
- Salt 1 tbsp
Instructions:
- Rinse barley thoroughly using strainer until the leftover water is coming out clear.
- Place in a medium size pot with cold water, coconut oil, salt, thyme, italian seasoning.
- Bring it to a boil, mix then let it simmer covered for 25-30 min.
Tried coconut oil in my brown rice today and it was delicious! Good to have a healthy substitute for butter that also tastes great. Thanks for the tip!
